What is a microgreen?

A microgreen is a young seedling of an edible vegetables and herbs. Microgreens take about 10-12 days till ready to harvest. These tiny versions only grow to a few inches tall and can come in up to 60 different varieties. Despite their small stature, microgreens have a more intense flavor and up to 40x the nutrition and potent phytochemicals than their mature counterpart. For example, a red cabbage had the highest concentration of vitamin E and 6x the vitamin C, while cilantro microgreens have 3x more beta-carotene. They are a great source for natural occurring nutrition at a potency we rarely come by.

Microgreens vs Petite Greens

A step up from Microgreen are Petite Greens.. not yet a full Baby Green. Some can contain even more nutrition than their microgreen buddies, but neither lack flavor and add beautiful, nutritious appeal to any dish. Both can be incorporated in salads, smoothies, juices or used as superfood garnish/topper. They can replace a salad, and once experienced, most preferred it. Both Petites and Microgreens have potent health benefits, and some amazing disease fighting capabilities when added regularly to the diet.

Storage and Care

Both Microgreens and Petite Greens have a shelf life of 12 to 14 days when kept at about 40 degrees. If moisture accumulates I the container, just blot it with a clean paper towel.  It is recommended to rinse greens with high quality water before consumed, (a salad spinner works great for getting excess water).

Hulls and seed casings

It’s wise to be vigilant of these when preparing your salad, especially the BEET HULLS. A beet hull is the seed head that can still be attached to the leaf or free range. Beet hulls are extremely hard, and do not soften up.  All products are triple checked to ensure the best quality product reaches you, but beet hulls are great at hiding themselves so always check your clusters.  Most other seed hulls on the other hand are soft, typically still connected to a leaf, naturally occurring, and are harmless. Shaking greens in a colander prior to rinsing can remove them.     

Those who suffer from Diverticulitis, rest assured microgreens are still good for you, in this case, it is pertinent that the greens be rinsed to remove as many of the hulls as possible.

WHAT IS SULFORAPHANE AND WHAT DOES IT HAVE TO DO WITH GLUCORAPHANIN?

Glucoraphanin. What is it? How is it good for me?

Glucoraphanin is a sulfur-containing compound found in Cruciferous vegetables such as BROCCOLI, KALE, CRESS, CABBAGE, BRUSSEL SPROUTS, CAULIFLOWER, BOK CHOY, AND MUSTARD PLANTS. When we eat foods with this compound it activates enzymes that play a critical role in the defense response of the plant…as well as in our bodies. This enzyme is called Myrosinase  and it is only activated when the plant is damaged, therefore we must cut, chop or chew these veggies to release and activate the Glucoraphanin into SULFORAPHANE. Another big word?? Yep a critically important one in aligning the defense team of the body to fight off diseases.

It’s important to cut the vegetables before you eat them and chew them well to activate sulforaphane from its inactive form, glucoraphanin.
To optimize your intake of sulforaphane, eat vegetables raw or cooked at temperatures below 284˚F (140˚C)

Which vegetables have the most sulforaphane?


Sulforaphane occurs in broccoli sprouts, which, among cruciferous vegetables, have the highest concentration of glucoraphanin, the precursor to sulforaphane. It is also found in cabbage, cauliflower, Brussels sprouts, bok choy, kale, collards, mustard greens, and watercress.
